Mashed potato

Serves 2

You will need

  • 2 small sweet potatoes OR 4 small white potatoes
  • Salt (to taste)
  • 1 tablespoon Butter
  • Pepper (to taste)
  • 1 tablespoon Milk
  • Chives (to serve)

Method

  1. Peel the potatoes and chop into 2cm cubes.
  2. Add potatoes to a saucepan and cover with water. Bring water to the boil over medium-high heat. Boil the potatoes for 15 minutes, or until the potatoes are soft.
  3. Once cooked, drain potatoes using a colander or sieve.
  4. Place potatoes in a bowl. Add butter and milk. Mash with a potato masher or fork until soft and fluffy. Season with salt and pepper.
  5. Serve with chives.
